Turkey Sliders with Summer Salad by Tracy Kontos

It’s summer time and that means it is all about the great outdoors!  There’s nothing better to celebrate the warmth, than by stepping out of the kitchen and into your own backyard.  Here is a super simple recipe that is healthy, tasty, and more importantly, perfectly sized for the little ones in your life.  Delicious grilled turkey burgers that hide a few spinach leaves and are topped with fresh avocado and homemade ranch dressing…paired with a watermelon, tomato, and cucumber salad you’ll have an instant backyard family cookout.

Turkey Sliders with Summer Salad
Serves 4-6

Turkey Burgers
-1 lb dark ground organic turkey meat

-2 tbsp minced red onion or shallot

-1 tbsp onion powder

-2 tbsp olive oil

-1 tbsp sea salt

-1 tsbp black pepper

-2 avocadoes pit removed and sliced into circles

-1 cup fresh spinach

-(Cheddar Cheese Optional)

-Package of 8 whole grain dinner rolls

1. Preheat grill for at least 20-30 minutes

2. Mix all ingredients for the burgers in a bowl and form little patties about 2 inches diameter (depending on your dinner roll size)

Grill patties until cooked through and no longer pink.

Grill  the buns if you like, then assemble with spinach, burger, avocado, and top with ranch.

Ranch Dressing
-1 cup buttermilk

-6oz Greek yogurt

-1 tbsp onion powder

– ½ tbsp. garlic powder

-1 tbsp dried parsley

-1-2 tbsp red wine vinegar (to taste)

-Sea salt and pepper (to taste)

1. Whisk all ingredients together in a bowl.  Adjust seasoning to your liking with vinegar and salt and pepper.

Summer Salad
– ½ seedless watermelon, cut into bite size pieces

-2 small seedless small cucumbers, cut into thin slices

-2 tomatoes, seeded and cut into bite size pieces

-2 tbsp mint finely sliced

-1 tbsp lemon juice

-1 tbsp olive oil

-freshly ground black pepper to taste

-Feta cheese to garnish the top (do not mix in)

1. Toss all ingredients with the exception of the feta together.  When serving sprinkle the feta on top of the salad. (if you mix it in prior it will just get too soggy)
