Our pot of gold happens to be a bowl of pineapple – the star of our tropical St. Patrick’s Day smoothie and the secret behind its delicious Pina Colada-like taste.

Don’t let the taste fool you though – this smoothie gets its naturally beautiful green color from the 2 cups of spinach that are undetectable in taste, but pack in tons of hidden health benefits. Start your kids’ morning off with this secretly healthy St. Patrick’s day treat, and you’ll ALL be feeling the luck o’ the Irish! Tropical Green Smoothie Ingredients:

Serves 2 (or 3- 4 very tiny people)

BASIC INGREDIENTS:

  • 2 c. spinach
  • 1 c. frozen pineapple
  • 1/2 frozen banana
  • 1 c. unsweetened coconut milk
  • 1/2 c. vanilla greek yogurt
  • 1/4 c. ice

OPTIONAL INGREDIENTS:

  • A scoop (3 T.) of vanilla protein powder
  • A handful of sprinkles…because, sprinkles!

Tropical green smoothie Instructions:

For an extra special St. Patrick’s Day surprise, you can start by covering the bottom of the glass with a layer of rainbow sprinkles, because this little trick NEVER fails to impress.

When you’re ready to blend, start with liquid on the bottom, then add the rest of the ingredients in layers. Mix until smooth, pour into glasses, top with a sprinkle of sprinkles (maybe even some whipped cream…) and prepare for accolades!
