Drink: 80s-Inspired Pop Rocks Punch

Getting the other latch-key kids together and hitting up the Convenient Store for dollar candy was an eighties after-school tradition in my neighborhood. Of all the glorious secret-stash favorites, the most coveted score was a packet of Pop Rocks. There was something so satisfying about the snap, crackle, and pop of those tiny carbonated candies.

They were so beloved, they even became the subject of eighties-kid urban legend…there was no double-dare scarier than being challenged to a Pop Rocks and soda throwdown. Luckily, we lived to tell the tale, and to ring in our 80s week, we thought we’d use the legendary combination in a “drink-if-you-dare” Pop Rocks Punch! Spoiler alert: you won’t explode – HA! In fact, you’re going to love it (and the juice makes a fantastic popsicle base for steamy summer days too!).

To Make Pop Rocks Punch You’ll Need:

MAIN INGREDIENTS

  • Equal parts:
    •  pineapple juice
    • pomegranate juice
    • lemonade (we used pink lemonade for the pretty color!) or orange juice
    • sparkling water (citrus or coconut taste great in this!)
  • 1 packet of Pop Rocks (we used strawberry)
  • Lemon or lime wedge

Just a note: Pop Rocks fizz due to carbonation, and though combining them with sparkling water is NOT dangerous – it does produce a couple of extra bubbles. This recipe uses a very small amount as a garnish and though you probably won’t notice it, if you’re concerned about your kiddos or too much carbonation bothers you, just leave out the sparkling water (or replace it with coconut water – yum!)
